How to make omelet curry
For Omelette:
Mix the eggs with a pinch of salt, add coriander leaves.
Heat 2 tablespoons of oil in a pan, add egg mixture and cover with a lid to prepare half inch omelette. Cut into square pieces and keep aside.
For Curry:
Heat oil in pan and add cumin seeds.
Add onion paste and stir until the color changes or the water evaporates.
Add tomato paste, ginger and garlic paste and fry till the tomato water dries. Add 2 cups of water. Add salt, chili powder, turmeric, garam masala and let it boil for 10 minutes.
Add chopped omelets and cook for 2 minutes without stirring. Turn off the gas and allow it to rest.
Garnish with finely chopped coriander leaves. serve hot.
